Sautéed Summer Squash with Red Onion and Dill
From the cookbook, Cooking Close to Home, this easy recipe makes a fresh side dish that will serve 4.
2 teaspoons olive oil
¾ cup red onion, julienned
3 cups yellow squash, julienned
3 ½ Tablespoons chopped fresh dill
Salt and freshly ground black pepper to taste
Heat a medium sauté pan over medium heat and add the olive oil to the pan.
Add the red onion and sauté for 3 minutes.
Add the squash and sauté for 5-6 minutes.
Add dill, salt and pepper and sauté for 2 more minutes.
Remove from heat and serve.
