Ingredients:

4 to 6 medium yellow or green squash
1 lb ground turkey (if vegetarian, canned chickpeas can be substituted)
1 large onion, chopped
1-2 cloves of garlic, minced (optional)
Olive oil
3 medium tomatoes, chopped
1 cup tomato sauce
Salt/pepper/spices (oregano, basil, cumin, curry — up to you), to taste
1 cup cooked brown rice

Ingredients

1 large onion, chopped
2 Tablespoons olive oil
2 parsnips, peeled and cut into small chunks
2 turnips, peeled and cut into small chunks
2-3 carrots, peeled and sliced
2 potatoes, peeled and cut into small chunks
1/2 cup dried lentils
1/4 teaspoon red pepper flakes
4 cups broth (beef, chicken or vegetable)
1 teaspoon fresh chopped herbs (could use parsley or oregano)

Parsnip soup

Ingredients:

note: that amounts are approximate.

1 onion, peeled and chopped
About one pound of parsnips, peeled and cut into 2-3 inch chunks
Olive oil to coat bottom of soup pot
1 quart chicken or vegetable stock (Trader Joes’s is fine) or enough to generously cover the parsnips
