Tuna Cabbage Salad
Here is a Tuna Cabbage Salad recipe submitted by one of our CSA members. It comes together quickly if you have a mandolin slicer, and can be prepared a day in advance.
Ingredients:
1 head cabbage (Napa or Savoy are best)
1 medium yellow onion
2 cups cooked lima beans
1 can tuna in olive oil
Dressing:
⅛ – ¼ cup olive oil
2 teaspoons lemon juice (or more to taste)
Salt and pepper
Procedure:
- Using mandolin, thinly slice cabbage and onion. Add beans and tuna. Mix thoroughly.
- Mix ingredients for dressing, and pour over salad. Adjust seasonings as needed.
