Kohlrabi-Apple Slaw
This recipe, found in this month’s Food Network Magazine and which serves 4 as a side, is a surprising and refreshing alternative to regular coleslaw given most people’s lack of familiarity with this vegetable. Give it a try — that’s what a CSA is all about!
Ingredients:
¼ head shredded green cabbage
2 kohlrabi, julienned
2 apples, julienned
¼ cup chopped dill
For the dressing:
¾ cup mayonnaise
¼ cup sour cream
3 Tbsp cider vinegar
2 tsp sugar
½ tsp kosher salt
3 Tbsp prepared horseradish
1 Tbsp grainy mustard
Procedure:
Whisk all the dressing ingredients together. Toss with the shredded cabbage, and julienned apples and kohlrabi, and chopped dill. Let chill for at least an hour before serving to allow flavors to marry.
