Freezer Cole Slaw
Did you know that you could freeze cole slaw? Making this recipe is a great way to use up extra cabbage, peppers, and carrots. When sealed in freezer bags, it will last for months and can be thawed out whenever you need it. Makes 2 quarts.
Ingredients:
1 head shredded cabbage (about 2 quart)
½ teaspoon salt
1 green pepper chopped
1 carrot grated
¼ cup boiling water
½ cup sugar
½ cup white vinegar
½ teaspoon celery seed
½ teaspoon caraway seed
Procedure:
- Mix shredded cabbage and salt and allow to stand about 1 hour.
- Mix in a saucepan ¼ cup boiling water, sugar, white vinegar and boil for a minute and then cool.
- Spin salt and water out of cabbage and add pepper, carrots, celery seed, and caraway seed.
- Pour in cooled vinegar mixture and let stand for ½ hour before packaging to freeze.
