Farm News – November 25, 2014 – Stock up!
Hi Everyone, I wanted to give you the rundown on what you will encounter in your stock up shares. Otherwise, I may be inundated with emails containing photos of strange, unknown vegetables. What is it, and what the heck do I do with it? I can help with what it is and how it should be stored. As for how to prepare it -that’s what Google is for, right? The share consists of a box and a bag…
The box contains various winter squash – buttercup(kabocha), butternut, acorn, sweet dumpling, and carnival. There are bags of fingerling potatoes, redskin potatoes, and Purple Majesty (purple flesh). There are orange, white, and Japanese sweet potatoes, onions, garlic, shallots. All the items in the box should be stored in a cool dry place, except for the garlic, which will keep best in the fridge.
The bag consists of various bags of root vegetables, many with two types per bag – radishes with turnips, daikon with watermelon radishes, carrots with beets, parsnips, rutabaga, and sunchokes. There are Napa and red cabbages, Brussel’s sprouts, and cauliflower. For greens, you will find spinach, arugula, kale, radicchio, and cilantro. There is also a small head of celery with lots of nice leaves to flavor soups or your stuffing. The spinach was very muddy, due to the recent heavy rain, and had to be washed. It was bagged wet and will not keep this way- either use it quickly or try to dry it, perhaps in a salad spinner.
All the vegetables in the bag should be stored in the refrigerator in bags.
Thank you all for your support. I wish you all Happy Holidays and a safe and healthy winter.
