Members Corner – Homemade Veggie Burgers
You asked and a fellow CSA member, answered. Here is her recipe for veggie burgers. Enjoy!
Ingredients:
2 teaspoons olive oil
1 small onion, grated
3-4 cloves of crushed garlic
2 carrots, shredded
1 small summer squash, shredded
1 small zucchini, shredded
1½ cups rolled oats **
1 cup shredded cheddar cheese (or cheese of your liking)
1 egg, beaten
1½ Tablespoons soy sauce
1½ cups all purpose flour
garlic powder, salt, pepper as desired to taste
Procedure:
- Heat olive oil in a skillet over medium heat, and cook onion and garlic for about 5 minutes, until tender. Mix in carrots, squash and zucchini. Continue to cook and stir for 2 minutes. Remove pan from heat, mix in oats, cheese, and egg. Stir in soy sauce. Transfer the mixture to a bowl and refrigerate for at least an hour.
- Preheat the grill to medium high heat (or use frying pan). Place the flour on a large plate. Form the vegetable mixture into desired round patties. Drop each patty into the flour, lightly coating both sides.
- Put tin foil onto grill to avoid sticking. Grill patties for about 5-7 minutes each side, or until heated through and nicely browned
