Skillet Roasted Parsnips
Parsnips work great as a side dish with carrots and are very easy to make. This recipe comes from Cook’s Illustrated which is a good place for reliable recipes.
½ cup warm water
1lb carrots – both peeled and cut diagonally in 1/2 inch thick pieces
2 Tablespoons oil
1 teaspoon sugar
1 teaspoon salt
Saute in a 10-12 inch skillet in 2 tbsp oil for 12-14 min on medium-high.
Add ½ cup warm water, 1teaspoon sugar and 1 teaspoon salt. Cook 15 more minutes on medium-low.
Serve with parsley and additional salt and pepper as desired
