Member’s Forum – Tuna Cabbage Salad
Here is a Tuna Cabbage Salad recipe for one of the dishes served by CSA member Francesca Degiuli:
1 head cabbage (napa or savoy are best)
1 medium yellow onion
2 cups cooked butter beans (aka lima beans)
1 can tuna in olive oil
1/8 – 1/4 cup olive oil
2 tsp lemon juice (or more to taste)
Salt and pepper
Using mandolin, thinly slice cabbage and onion. Add beans and tuna. Mix thoroughly.
Mix ingredients for dressing, and pour over salad. Adjust seasonings as needed.
Best made 24 hours in advance.
