Homemade Veggie Burger

You asked and a fellow CSA member, answered.  Here is her recipe for veggie burgers. Enjoy!

Ingredients:
2 teaspoons olive oil
1 small onion, grated
3-4 cloves of crushed garlic
2 carrots, shredded
1 small summer squash, shredded
1 small zucchini, shredded
1½ cups rolled oats **
1 cup shredded cheddar cheese (or cheese of your liking)
1 egg, beaten
1½ Tablespoons soy sauce
1½ cups all purpose flour
garlic powder, salt, pepper as desired to taste

Procedure:

  1. Heat olive oil in a skillet over medium heat, and cook onion and garlic for about 5 minutes, until tender.  Mix in carrots, squash and zucchini.  Continue to cook and stir for 2 minutes.  Remove pan from heat, mix in oats, cheese, and egg. Stir in soy sauce.  Transfer the mixture to a bowl and refrigerate for at least an hour.
  2. Preheat the grill to medium high heat (or use frying pan).  Place the flour on a large plate.  Form the vegetable mixture into desired round patties.  Drop each patty into the flour, lightly coating both sides.
  3. Put tin foil onto grill to avoid sticking.  Grill patties for about 5-7 minutes each side, or until heated through and nicely browned
