Did you know that you could freeze cole slaw?  Making this recipe is a great way to use up extra cabbage, peppers, and carrots.  When sealed in freezer bags, it will last for months and can be thawed out whenever you need it.  Makes 2 quarts.

Ingredients:
1 head shredded cabbage (about 2 quart)
½ teaspoon salt
1 green pepper chopped
1 carrot grated
¼ cup boiling water
½ cup sugar
½ cup white vinegar
½ teaspoon celery seed
½ teaspoon caraway seed

Procedure:

  1. Mix shredded cabbage and salt and allow to stand about 1 hour.
  2. Mix in a saucepan ¼ cup boiling water, sugar, white vinegar and boil for a minute and then cool.
  3. Spin salt and water out of cabbage and add pepper, carrots, celery seed, and caraway seed.
  4. Pour in cooled vinegar mixture and let stand for ½ hour before packaging to freeze.
