Butternut squash is typically on most people’s dinner tables so here is a fairly simple side dish that isn’t too time consuming. This recipe comes from Diane Imrie and Richard Jarmusz book “Cooking Close to Home: A Year of Seasonal Recipes”, and can also be found on sugartreemaplefarm.com. The recipe as is serves 6; you can double the recipe, but cook each batch in separate pans to allow for proper roasting. Extras freeze nicely, too. (more…)
Here’s a wonderful fall soup from Ina Garten’s Barefoot Contessa show on the Food Network. Some commenters felt that the recipe turned out overly sweet — you might want to try adding more squash, cutting back the apple cider, or using broth instead of water, if you like a more savory soup. (more…)

From the Eva Bakes food blog, here’s a yummy spiced bread made with butternut squash. You can substitute other similar winter squash for the butternut (e.g. pumpkin or buttercup), and since you’ll probably have more than 1 cup of squash purée, you’ll be able to make several loaves (they freeze well too). From an old, Edible Vermont (2009) magazine, Winter issue, these spiced cookies are cake-like in texture and so welcoming on a cold, wintry day with a hot cup of tea (or cocoa). Roast and mash the butternut squash ahead of time so you have it ready when you want to bake these cookies. The recipe yields about 5 dozen. (more…)
