Dragon’s Tongue Beans With Garlic

Don’t be scared by these unique looking heirloom beans – they are really very delicious.  Dragon’s Tongue beans have vivid purple streaks that fade when the beans are cooked.  Here’s a simple preparation from the It Ain’t Meat, Babe food blog.

2-3 Cups of beans
2 Tbsp olive oil
1 clove crushed and chopped garlic
1 handful of fresh basil, chopped (or 1 Tbsp dried)
salt and pepper


  1. Steam beans for 5 minutes until yellowy and not very speckled.
  2. Combine all other ingredients, except salt and pepper, in a bowl and add beans. Toss to coat.
  3. Season to taste with salt and pepper.
