The following easy recipe is a snap to make and provides a nice side dish to any main meal. Serves 4-6
4 medium kohlrabi bulbs, peeled and coarsely grated
1 Tbsp butter
1 Tbsp olive oil
1 garlic clove, finely chopped
1 medium onion, chopped
1 Tbsp lemon juice
2 Tbsp chopped fresh parsley
Salt and freshly ground pepper to taste
2 Tbsp lite sour cream
- In skillet, heat butter and olive oil. Add onion, garlic and grated kohlrabi and sauté for 5-7 minutes until kohlrabi is tender crisp.
- Stir in lemon juice and parsley. Season with salt and pepper to taste.
- Stir in sour cream and heat through. Serve hot.
