Soba Noodle and Vegetable Lettuce Wraps

Ingredients

Sauce:
1 Tbsp sesame oil
2 Tbsp rice vinegar
1 Tbsp + 1 tsp soy sauce
1 Tbsp mirin (sweet rice wine)
2 Tbsp hoisin sauce
1 tsp honey
1 tsp finely grated fresh ginger
1 tsp chili garlic sauce

Noodles:
8 oz soba noodles
1 tsp canola oil
1 Tbsp peeled and roughly chopped fresh ginger
1 clove garlic, sliced
4 oz snap peas, trimmed and cut in half
2 medium carrots, peeled and cut into matchsticks
¾ red bell pepper, thinly sliced and cut in half
1 tsp toasted sesame seeds
1 head Boston leaf lettuce, leaves separated and washed

Procedure
Sauce – whisk together all ingredients for sauce

Bring a large pot of water to boil over high heat. Add soba noodles and cook according to package directions.

Drain noodles and rinse well with cold water.

Heat oil in large skillet. Add fresh ginger. Saute for one minute. Add garlic and sauté for additional 30 seconds. Using slotted spoon, remove ginger and garlic.

Add peas, carrots, and bell pepper to oil, sauté for one minute or until vegetables are crisp-tender. Add vegetables and sesame seeds to noodles, pour in sauce and toss gently to coat.

Fill lettuce leaves with noodle mixture.
